22° North works with a number of local ranchers and fishermen to provide their beef, pork, rabbit and fish. The beef they serve is so fresh that once the animal is butchered for the kitchen, specific cuts of beef are only available as long as they last on any given day. Now that's fresh. If you want a specific cut of beef at dinner, get there early! A cow only has two tenderloins and two rib-eyes and once all the cuts of meat are all gone, the menu changes.
In this way, 22° North appeals not only to island visitors but Kauai residents who wish to partake in the ever growing concept of "locavore" cuisine where all menu items are locally grown or raised. This enables the restaurant to provide a high quality of the freshest foods and in turn it helps promote local agriculture.
