Banana Bread

This favorite made with mashed ripe bananas is often offered at luaus.

Ingredients:

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 1 3/4 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups mashed bananas
  • 2 eggs, beaten
  • 1 cup macadamia nuts, pecans or walnuts

Preparation:

Preheat oven to 350 degrees.

Grease and flour a loaf pan.

In a bowl, mix butter and sugar until creamy. In a separate bowl combine flour, baking powder and salt.

Blend dry ingredients with creamed butter/sugar mixture.

Add mashed bananas, eggs and nuts.

Pour into loaf pan.

Bake for 1 hour or until a knife comes out clean.
