Papaya Bread

An island favorite made from papaya, carrots, applesauce, and chopped walnuts.

Ingredients:

  • 3 eggs
  • 3/4 cup oil
  • 1 cup sugar
  • 1 cup shredded carrots
  • 1-1/2 cups applesauce
  • 1-1/2 cups mashed papaya
  • 1-1/4 cups chopped walnuts
  • 1 teaspoon salt
  • 4 cups flour
  • 1 tablespoon baking soda
  • 1 tablespoon cinnamon
  • 1 teaspoon nutmeg

Preparation:

Preheat oven to 325 degrees.

Lightly grease or apply cooking spray to 2 loaf pans.

Combine eggs, oil and sugar. Mix on low speed for approximately 30 seconds.

Add carrots, applesauce, mashed papaya and nuts.

Mix on low speed for approximately 30 seconds.

Combine salt, flour, baking soda, cinnamon and nutmeg.

Add to wet mixture and mix by hand until combined.

Spoon batter into loaf pans.

Bake for 55-60 minutes.

Let rest in pan for approximately 10 minutes.

Remove from pan and cool on wire rack.
