Pecan pie is a favorite of my family so when I returned from Hawaii with fresh macadamia nuts I used them in place of the pecans to make this rendition of Macadamia Nut Pie
Ingedients
1 ready made single pie shell, unbaked
1 cup light brown sugar, packed
1 cup light corn syrup
3 eggs, slightly beaten
3 tablespoons melted butter
1 teaspoon vanilla extract
pinch of salt
2 cups macadamia nuts, coarsely chopped
Instructions
In a large bowl, combine brown sugar and corn syrup and mix well. Crack eggs into a separate bowl and beat slightly. Add to sugar mixture. Melt butter, cool slightly and add to sugar mixture. Add vanilla and salt and use whip to mix until everything is well combined. Add macadamia nuts, mix well and pour into unbaked pie shell. Bake in preheated 350 degree oven for 45 to 50 minutes or until center is done. Cool. Serve with whipping cream or ice cream as desired.
Tips and Tricks
- The nuts and edges of the crust tend to become too dark during the last part of the baking time so you might need to cover the pie with aluminum foil the last 15 minutes or so.
